Baking Lamingtons…

Lamingtons were an absolute must at every Eid (Islamic religious celebration) back when I was living with my parents in England. My mother would put me and my sister to work once she had baked the cake (from scratch, unlike me!) and whilst one of us coated the cake in chocolate, the other would roll it in dessicated coconut. We would sneak a taste and delve ourselves in the magnificent aroma of baking and chocolate. We would make an entire box full of lamingtons and enjoy them every afternoon at tea time. I would even gobble them up at breakfast!

It feels like decades since I have had my last lamington, and I had been craving some of my Mum’s lamingtons for a long time. Yesterday, I had to put an end to those cravings and decided to bake them myself. Though the end result is a mouthful of heaven, I now understand why my mum asked us to help her make them. The process is quite messy and a lot of faff, even more so when you have a 10 month old at your feet screaming for entertainment!

I thought I would share with you a quick recipe below. First, you need a plain sponge cake! I started off with a Ready Cake Mix, one of those glorious inventions where you simply need to add some water, oil and eggs, then give it a whizz and whack it in the oven! *Genius!* Speaking as a mother, the easier, the better! Baby Z played with a spoon as I propped him in his highchair in the kitchen, and he rather enjoyed watching me whisk the batter!

Once the cake is baked, leave to cool on the cooling rack. You can then prepare the chocolate sauce and have your coconut powder ready for rolling! You can also put a whining baby down for his nap as the cake cools…

Once the cake is cool, cut it into neat little squares. You are now ready for the fun part!

Now take each little piece of cake and cover all sides by dipping it  in the chocolate sauce.

To make the chocolate sauce all you need is 2 cups icing sugar, 1 cup cocoa powder, 1/2 cup softened butter and 1 tbsp hot water (add more if required).

Then coat the cake in dessicated coconut…

Now repeat this process for the rest of the cake pieces, and Voila! Your scrumptious lamingtons are ready to devour!

Note: During the dipping and coating process, do not forget to attend to your wailing baby whenever he/she calls you.(this may range from 1 – 100000 times!)  Also, wash hands before attending the baby as you don’t want chocolate sauce and coconut powder EVERYWHERE!

    My aunt is the Lamington baker in our family. Thanks for this reminder of how tasty they are. I must try them myself some time. My aunt bakes the sponge a day in advance. She says it holds its shape better then.
